2-301.14 (B): FOOD EMPLOYEES shall clean their hands and exposed portions of their arms as specified under § 2-301.12 immediately before engaging in FOOD preparation including working with exposed FOOD, clean EQUIPMENT and UTENSILS, and unwrapped SINGLESERVICE and SINGLE-USE ARTICLES and: (B) After using the toilet room. Observed an employee leave the bathroom, return to the kitchen, and begin to prepare beverages without washing her hands. The employee was asked to and then washed her hands and then returned to food prep. COS |

2-402.11 (A) (B):
(A) Except as provided in ¶ (B) of this section, FOOD EMPLOYEES shall wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES. The concentration of the quat sanitizer solution in buckets in the kitchen was too low. New quat solution was provided from the 3-compartment sink. COS |
